Yields 10 servings

To make the Clementine Cordial (produces 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar

Ingredients for the Cocktail (yields 850ml, serving 10)

400ml premium vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, to finish

Directions

For the Citrus Syrup: Put all the components inside a pot, heat until it reaches a simmer, stirring until the sugar dissolves. Then, turn off the burner allowing it to cool down fully. Pour into a sealable bottle, close it and store in the fridge, it will last for about a month.

For the Premix: Combine all the liquid ingredients into a big jug, allow it to infuse for 60 minutes, then filter it , ideally through cheesecloth, so it's completely strained.

When ready to serve: Measure 85ml of your premix into your mixing glass filled with ice, gently stirring lightly for one minute until cold. Filter to a chilled martini glass or equivalent, top with a few cranberries and finish using a brief mist of mandarin oil over the drink.
